Lower Fat Carrot Cake

A lower fat carrot cake recipe that uses egg whites only, pineapple and pre-made plum filling.

Ingredients

4 cups grated carrots
2 cups sugar
1 can (8 oz.) crushed pineapple
1 cup Love n' Bake or any preferred brand of plum lekvar filling
4 large egg whites
2 teaspoons vanilla
2 cup all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt

Instructions

Preheat oven to 375.

Coat a 9 X 13 pan with vegetable spray.

Combine carrots, sugar, pineapple, lekvar, egg whites and vanilla; blend thoroughly. Add remaining ingredients; mix completely. Spread batter in pan; bake about 45 minutes until toothpick...etc.
