Apple Dapple Cake

This is probably one of the best cakes I've ever eaten.  It's a simple cake recipe but what really makes it delicious is the glaze that is drizzled over the top.

Ingredients

2 cups sugar
1 1/2 cups corn oil
3 eggs
3 cups unsifted all-purpose (plain) flour
1 teaspoon baking soda
1 teaspoon salt
3 cups finely diced apples
2 cups pecans (you can substitute walnuts if you prefer)
2 teaspoons vanilla extract

Glaze
1 cup dark brown sugar
1/4 pound butter
1/2 cup heavy cream


Instructions

Preheat oven 325F

Combine sugar and oil and beat the mixture well.

Add the eggs, one at a time.

Sift the dry ingredients together and stir into the egg mixture.

Beat in the apples, nuts and vanilla.  Pour the mixture into a buttered spring form tube pan.

Bake about 1 hour or until a toothpick inserted in the center comes out clean.  

Combine the glaze ingredients in a medium saucepan.  Boil the mixture for about 3 minutes.  Set aside 1/3 cup of the glaze and pour the rest of the glaze over the the hot cake.

Allow the cake to cool completely then remove it from the pan onto a serving plate.  Right before server, pour the last 1/3 cup of glaze over the cake.

This cake is phenomenal.  We served it with just a small dollop of whipped cream.  We substituted walnuts for the pecans.
