Stilton and Watercress Spread

From Bon Appetite Magazine This simple recipe is one of my easy entertaining favorites because guests just love it.  Make it the night before serving and cover tightly with plastic wrap and refrigerate.  Bring it out at least 45 minutes before serving.

Ingredients

3 ounces Stilton cheese, crumbled
4 ounces cream cheese, room temperature
3 tablespoons butter, room temperature
1 bunch watercress, stems trimmed, leaves chopped
2 green onions, chopped
1/4 cup finely chopped toasted walnuts

Instructions

Mix the stilton cheese, cream cheese and butter in a medium bowl until blended. Mix in watercress, onions and nuts. Season with salt and pepper. Spoon the mixture into a small bowl. You can prepare the spread up to one day ahead. Serve the spread with crackers or a thinly sliced baguette.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco.
