Mole

Spanish name: Mole
  [MOH-leh]

Mole, pronounced (MOH-leh) is from the Nahuatl word molli , meaning "concoction, or mixture". Red mole is from central Mexico in the Puebla and Oaxaca regions, also know as the Land of Seven Moles. Other mole colors include brown, black, green, and yellow. The red mole is a rich, dark, reddish-brown sauce usually served with poultry. Generally, mole is a smooth sauce blended of onion, garlic, several varieties of chilies, ground seeds and a small amount of chocolate. It is important to note that not all moles contain chocolate. The traditional mole is usually served over turkey.

In Mexico you can go to the market place and purchase thick pre-made mole pastes.  The paste is typically heated in a pan with oil.. cooked, then diluted with water or broth to form a sauce.  There are some products similar to this in the U.S. but none compare to the products sold in the market places in Mexico.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.
