Amaranth

Spanish name: amaranth

Amaranth is an ancient tiny grain (actually a seed) native to the Americas.  This high-protein grain is used as a cereal or ground into flour.  The grain is convenient because it is cooks much more quickly than many grains.  The leaves are also eaten as fresh as in salads or cooked like spinach.  Fresh greens can be found in some well-stock grocery stores or Hispanic markers.
