Adobo

  [ah-DOH-boh, ah-doh-BAH-doh ]

Adobo refers to a dish as well as a seasoning.  The dish is a specialty from the Philippines that is made with chicken or pork simmered in a mixture of garlic, vinegar and soy sauce.  Also used in Mexico, its a rather sour seasoning paste made of ground chiles, herbs, and vinegar.  Adobo seasoning can be purchased in paste form or as a dry mixture.
