Wheat Berries

Wheat berries are the unprocessed wheat kennel which includes the bran, endosperm and germ. Wheat berries can be cooked alone or with other grains served as a very nutritious side dish.  The only downside to this product is that it does require a long soaking period (overnight is best) with an addtional 50 minutes or so cooking time.  If you want a similar product with a shorter cooking time choose semi-pearled farro (emmer) which cooks in about 20 minutes.

From James Beard...

The secret of good cooking is, first, having a love of it… If you’re
convinced that cooking is drudgery, you’re never going to be good
at it, and you might as well warm up something frozen.
