Vadouvan

Other names: misspellings: vaudovan,vaduvon

A specialty Indian spice mixture that commonly includes curry leaves, fenugreek, mustard seeds, garlic and sometimes cumin. As with most regional spices the ingredients may vary. One source suggests that the term refers to "a mixture of spices with oil and fried onions" used for adding a smoky flavor to vegetables, meats and fish.

If you are looking for a store-bought version try your local Indian grocery store OR a French market if you have one in your area. Otherwise, see recipes and make your own.
