Tartare

Other names: steak tartare, tuna tartare

In a nutshell, raw meat! Steak tartare is a dish made from very hith quality finely chopped beef served raw with a variety of fresh herbs and seasonings. Other accompaniments include capers, onions and even raw egg. The tartare or raw term also applies to tuna. In 2006 tartare is becoming repopularized and kicked up with chipotle chiles or horseradish and red salt. (See Bon Appetit, August, 2006.
