Sweet potatoes

Other names: camote

A sweet tasting tuber which originated in Central America. Most of the tubers referred to as yams in the U.S. are actually sweet potatoes. The sweet potato can be baked, boiled, mashed or pureed. It is also used for making Sweet Potato pie. Canned sweet potatoes are cooked then canned.

Substitute for sweet potatoes

Use purple, Japanese or red (called yams in the U.S.) interchangeably OR substitute parsnip OR Yukon gold.

Equivalents

1 lb   =   2 large or 3 medium, 2 cups cubed or sliced, 1 3/4 to 2 cups mashed
