Tomatoes that have been dried in the sun or a dyhydrator. The dried tomatoes may be packed in oil or sold dried. Sun dried tomatoes have a very tart, concentrated flavor. Use in sauces or chopped in salads and pastas.

Substitute for sun-dried tomatoes

For 1/2 cup chopped sun dried tomatoes, substitute either 1 1/2 cups drained canned tomatoes OR 4-6 fresh plum tomatoes, seeded and chopped. Both substiutions will yield a thinner sauce.
