A variety of onion divided into a cluster of small bulbs. Allium ascalonicum, was referred to as askolonion by the Greeks because they believe the shallot came from the city of Ashkelon in South Isreal but in fact it is more likely the shallot came from Asia.  Typically shallots are sold dried all year round but can be fresh in spring. The flavor is strong so the shallot is normally used in small amounts. One of the most famous uses for the shallot is to make Bearnaise Sauce but can also be pickled or as a substitute for leeks.

green (spring) onions, leeks OR yellow or white onions, or red Spanish onions


1 med   =   1/2-1 oz or 1 tbsp minced | 3 shallots = 1 small onion | 1 medium = 1/2 to 1 oz., 1 tbsp minced | 4oz = 4 to 6 medium, 10 to 12 small, 1 cup chopped, 3/4 cup minced
