Semolina flour


Typically hard durum wheat which has been ground into flour. The resulting product is high in gluten and is used for making pasta and breads. Semolina is available in coarse or fine texture flour. Look for semolina flour in your grocery or health food stores. A well known brand is Bob's Red Mill. You may want to store it in your refrigerator if you don't use it up within a month or so as it does tend to get rancid.

Substitute for semolina flour

Per cup: 1 cup durham wheat flour OR 1 cup spelt or Kamut flour. If making pasta you can use all purpose flour but the pasta will be softer.

can you sub.cornmeal for semolina if you grind it more?

Hi, you would be substituting corn for wheat so that could drastically change the recipe results.  You'd be better off substituting regular all-purpose flour or hold off making the recipe until you can buy semolina.
