Red cabbage

Red and green cabbage are similar flavored and can be used raw in salads or cooked. The pigment from the red cabbage will color other vegetables so select recipes where this will not be an issue. The red color add a colorful contrast in green salads. Red cabbage is sometimes pickled and sold in glass jars.
