Pronounced [pah-TAYor pa-TAY] Although litterally translated the word pate means "pie" in French this dish is a typically made of ground meat such as liver, pork, chicken or fish with the addition of various flavorings from port to tarragon. Pates are either very smooth or chunky (referred to as country style). There are vegetarian verions as well. Pates are normally prepared in a terrine, a loaf shapped pan and are sliced to serve. They may be served as an appetizer or a 1st course.
