A long, thin light green to yellow color squash grown in Mexico and the U.S. This versatile, small seeded squash can be used sliced fresh for salads or cooked in stir-fries and added to soups and stews. For best flavor eat the opo fruit when it is small and young. The older the squash the more bitter it becomes.
The squash is of African decent but is grown widely in Asia, U.S., Mexico and some parts of Europe.
