Okinawan sweet potato

Other names: beni Imo

A purple sweet potato from Okinawa. The exterior of the potato looks like a typical sweet potato with a yellowish tint with no hint of the surprising deep purple hue inside. The potato has become quite popular with Hawaiian chefs prized both for its sweet flavor and its unique dark purple flesh. In Okinawa the potato is served as an after dinner sweet, topped with sesame seeds.
