Manufacturing cream is a heavy pasteurized cream with 40% fat.  This product is typically found large 1/2 gallon containers and is used for commercial purposes.  Manufacturing cream is pure cream without any additives (like thickeners).  One manufacturer is Berkeley Farms.  That product can be purchased in Smart & Final stores in California.
