Substitute for lemon juice

equal amounts of lime juice, white wine, or use 1/2 teaspoon mild vinegar per teaspoon juice

Equivalents

1 medium lemon   =   2 to 3 Tablespoons |1 med lemon = 3 tbsp bottled lemon juice

I used white wine vinegar in hummus and it worked. It's not the same, I prefer lemon juice, but I won't make a special trip to the store for lemon juice when I have the vinegar (unless someone is dead or getting married.....you get the point). White vinegar works too, you're going for the acid, so while you're taking chances, play with flavors and see what works for your palette. Hope that helps :)
