Kasseri cheese

Other names: kassari

A Greek sheep's milk cheese with a rubbery texture and a sharp, salty flavor. Kasseri is a good melting cheese.  This cheese is well known as the cheese used in the Greek dish called saganaki.  The cheese is sautéed in butter, flavored with lemon juice and sometimes even flamed with Brandy.
