Kampyo

Other names: kanpayo

[KAHM-pyoh] Dried gourd strips used in Japanese cooking. The strips must be re-hydrated then they are used as ties to bundle various foods and also as a sushi ingredient. Kampyo can be purchased dried or if using for sushi you can purchase strips premoistened in soy broth.
