Jerusalem Artichokes

Other names: sunchokes

A relative of the sunflower, this vegetable is native to America, not Jerusalem, and has no botanical relation to artichokes. The white flesh is nutty, sweet and crunchy like chestnuts when raw. Baked in their skins, they become more like potatoes with a mild taste of artichoke hearts.

Selection:
Choose firm sunchokes that are not moldy, soft or wrinkled. Some sunchokes will have dark brown skin while others will be light brown in color, like ginger.

Storage:
Refrigerate, unwashed, in a plastic bag for up to 1 week.

UCSF Researchers say products with added sugar should be controlled just like alcohol or tobacco. They are  advocating that the government take control of the situation because the citizens are unable to do so. The solutions they suggest include doubling the price of sodas via a sugar tax, put age restrictions on purchase of products containing added sugar and legislate which stores are allowed to sell products with added sugar.

Do you favor making sugar a government controlled substance like alcohol and tobacco?
