Gypsy peppers

Similar to a bell pepper but with more umph! The exterior of the pepper graduates in color from green to red-orange then orange. While the flavor is similar the gypsy has no heat and is even sweeter than a standard bell pepper. The pepper is grown virtually year round with crops coming from Mexico and the U.S.

Select peppers that are heavy and "hard" feeling. Avoid shriveled peppers or those with sunken areas. Don't wash them until you are to use them. To store, wrap in damp paper towels then bag and refrigerate for up to 2 weeks.

Slice and cook with chicken or meats or chop as a crispy addition to salads.
