Garam masala is an Indian spice mixture used in many dishes from meats and poultry to vegetables. You can buy this spice in Indian grocery stores or online or try one of the many recipes available to make your own. The term translated means "hot spices". While many versions are not all that "hot" it is quite aromatic and should not be overused.
To make your own you should start with whole spices. The spices should be toasted either in the oven or in a heavy pan, then ground either in a mortar and pestle or a small spice grinder or blender. A typical blend of spices may include cumin, black pepper, fennel, clovers, cardamom pods and cinnamon.
