Fish sauce

Other names: nam pla, Nuoc Mam

Fish sauce is the most common ingredient in Thai cooking. It is also used in many other types of Asian cuisine. This sauce is called Nam Pla in Thai and Nuoc Mam in Vietnamese. The sauce is made by placing fish in barrels where it is left to ferment. The resulting liquid is the strong smelling, flavorful fish sauce. The strong smell dissipates when it cooks and leaves a distinctive complex flavor.
