Dijon mustard

From Dijon, France, this mustard is distinguished from others because it is flavored with verjus (juice made from unripe grapes). The mustard is made from brown or black mustard seed and has a smooth, not-too-acidic flavor. The original recipe was created by Jean Naigeon in 1856
