Chilaquiles is a popular dish in areas ranging from the U.S. border all throughout Mexico and downward into Guatemala.  The dish is popular because it is a good use for stale corn tortillas. Depending on the dish the tortillas are cut in strips or broken then layered with beans, or meats, vegetables and cheese. See recipes.
