Cottage cheese


A type of fresh cheese made from pasteurized cow's milk. This type of cheese can be purchased in whole milk, low fat or fat free versions. Addition variations include small, medium and large curd. Purchase cottage cheese in most grocery stores.

I live overseas and can't get cottage cheese or ricotta.  Is there a substitute to make lasagna?

I reviewed several recipes in Giuliano Bugialli cookbooks and many of his traditional Italian recipes don't use either one but simply use a combination of mozzarella and either Parmesan or Romano cheeses.   Other suggestions were to substitute some grilled or fried eggplant slices for a "creamy" texture.  If you want to email me and let me know where you are located I may be able to recommend a regional similar cheese as well.

My wife took cooking lessons while we lived in Rome. Her teacher used bechamel and mozarella - no ricotta and certainly no cottage cheese. The lasagna noodles, pasta sauce (or whatever you're using), mozarella and bechamel are layered as usual.  The bechamel makes the lasagna creamy and a little "oozing", much better than the square-cut firm layers one sometimes gets.
