Colby cheese


A cow's milk cheese native to Colby, Wisconsin.  This semi-soft cheese is rindless and is typically sold in blocks or half-rounds.  Colby can be used for snacks, sandwiches or grated and used to top casseroles or add to sauces.  The cheese has a flavor similar to a mild cheddar.
