Coconut flour

Coconut flour is made from the coconut fiber left over after liquid has been extracted from the coconut meat. The resulting product is gluten-free and can be used in place of wheat flour.

When Replacing Wheat Flour
Bob's Red Mill suggests that you can replace up to 20% of the flour called for in a recipe with Coconut Flour, adding an equivalent amount of additional liquid to the recipe.
