Chicory blossoms


Chicory is a plant you may have growing in your yard or see growing alongside the road. The leaves are bitter and cultivated versions are sold as cooking greens.  The chicory flower is pale lavender to white and the petals only are edible but caution should be used when serving to anyone who may have allergies. 

The root of the chicory plant can be roasted and ground and made into a form of coffee popular in Louisiana.
