Carrageen moss

Other names: dulse (similar but different species)

An Irish sea-vegetable with red to purple color fronds. The moss was discovered around 1810 and was used as a primary food source by Irish coastal residents during the great famine. Still harvested and used today carrageen moss works as a natural thickener and is used in a variety of traditional soups, stews and puddings. Medicinally, the moss is used to treat respiratory ailments and reasearch has shown that an extract made of the moss has anti-viral properties. Image provided by: ©M.D. Guiry
