Burrata cheese

A "modern" specialty cheese from Puglia, Burrata was created at the beginning of the 20th century. Burrata is a a cow's milk cheese closely related to mozzarella and actually made with mozzarella curds and fresh cream. The resulting cheese has a creamy texture and a sweet flavor. The cheese is wrapped in a herb (Pugliese asfodelo) to enhance the unique flavor. To use, toss into warm pasta, or use in a caprese salad (fresh ripe tomatoes, basil and cheese)
