Berbere spice

An aromatic Ethiopian peppery spice mixture which typically includes red pepper, garlic, cardamom, coriander, fenugreek as well as other spices. As with many regional foods the actual recipe will vary from family to family. The spice is used in soups and stews, and for making a sauce. It can also be used as a rub for meats and sprinkled atop injera, a flat bread made from sprouted teff.
