Beef tenderloin

Other names: short loin

A large cut of beef that comes from middle, back of the steer between the sirloin and the rib. The tenderloin roast comes from this cut and is also called a Chateaubriand When cut into steaks the the cut is called fillet Mignon. Several other cuts come from the short loin including the club steak, strip steak, Delmonico steak and the Porterhouse.
