Ballyoak cheese


Ballyoak is a type of Brie made in Ireland using pasturized cow's milk.  The cheese is then kiln-smoked with oak wood.  Ballyoak cheese can be found in some gourmet shops as well as online stores.  This cheese pairs well with Pinot Noir.
