Whole dried ancho chiles. Ancho means "wide" in Spanish and is actually a dried poblano pepper. The ancho is part of the "holy trinity" of chiles used in mole sauces. An ancho chile is a dried poblano pepper.

do you have any substitutions for this chilli that i can use to make mole bitters? im based in cape town, south africa and am struggling to find this particular chilli

Hi,  as noted mulato is the best substitute but if you don't have Ancho I'm sure mulato would be even more difficult to obtain.  If you could tell me what chiles you have access to, then I can recommend the best option.
