Almond Paste


Almond paste looks like a lump of Play Dough. It is actually a confection made from blanched dried almonds, sugar, and a liquid such as glycerin or cane syrup. Almond paste is similar to marzipan except it is less granular and contains less sugar. Use almond paste in in cookies, cakes, candies and pastries. It is particularly popular in Europe.

Store indefinitely refrigerated. If the paste gets too hard you can heat it gently to soften it again.

Substitute for almond paste

marzipan (sweeter) OR for 3 tbsp almond paste substitute a mixture of 1/4 cup blanched slivered almonds ground to a paste with 1 tablespoon sugar

What is the equivalent of Almond extract to Almond paste?

I think the larger issue is that you are only looking at replacing the "flavor" but almond paste has a lot of volume.  What type of recipe are you looking to make?

Without seeing your recipe the substitution shown 3 tbsp almond paste substitute a mixture of 1/4 cup blanched slivered almonds ground to a paste with 1 tablespoon sugar would function.  OR another flavor nut paste.  Otherwise you may be better off selecting a different recipes if the almond paste is key ingredient.
